Veg Kurma...



Ingredients:

  • Big onions - 3
  • Tomatoes - 4
  • Turmeric Powder - 1/4 tsp
  • Dhania Powder - 11/2 tsp
  • Diced & Mixed Vegetables - 3 cups
  • Cooked Green Peas - 1/4 cup
  • Chilli Powder - 11/2 tsp
  • Fresh Thick Curd -1 cup
  • Milk - 1 cup
  • Green Chillies - 2
  • Spices - Cardamom, Cinnamon, Clove
  • Ground Paste - Coconut - 1 cup, Cashew nuts - 10, Poppy seeds - 2 tbsp

Method:
Slice chillies lengthwise, cut onions and tomatoes finely. Mean while steam cook all the mixed vegetables. Heat oil in a frying pan, add the spices, green chillies and then the onions. Fry till golden brown and then add chopped tomatoes. Still till it becomes pulpy. Add dhaniya powder and fry for a minute. Add the ground paste, cooked vegetables, salt, turmeric powder, peas, and chilli powder. Cook till it becomes thick. Add the whipped curd in the end. Boil for a minute and remove from the fire. Mix the milk with this. Garnish with chopped coriander.

Kashmiri Pulao...



Ingredients:


  • Almonds
  • Cashew nuts
  • Raisins
  • Cherries
  • Spices - Cinnamon, Cardamom, Nutmeg, Mace, Clove, Fennel Seeds, Green Fennel Seeds
  • Small chunks of sweet pineapple
  • Rose Water
  • Basmati rice - Cooked
  • Pure Ghee, Salt

Method:
Take a wok, add ghee. Once the ghee becomes hot, add the fennel seeds and the spices and fry till they become brown.
Then add the almonds, cherries, cashew nuts and raisins. Fry till the cashew nuts turn golden brown. Then add the rice, sprinkle little rose water and add the pine apple chunks and mix.
Serve hot with spicy korma.
