Ingredients:
Spring onions - 1 bunch (cut into 1" strips)
Cucumber - 1 very small or 1/4 of a big long one (skinned, seeded, chopped into chunks)
Radish - 2 small red ones (cut in circles) or 1/4 of a big long one
Mint leaves - 6 leaves
Iceberg/Romaine Lettuce - 1 cup (roughly shredded)
Cottage cheese (fat free) - 3 tbs
(people in India - take two cups of fat free thick yogurt, put inside a muslin cloth and hang under a tap. let all the water from the yogurt drain away and use the cheese inside the muslin cloth)
For Dressing:
Lemon juice - 2 to 3 tbs
Lemon zest - little (scrape lemon rind on a scraper)
Extra virgin olive oil - 3tbs
Dijon mustard - 1 tsp
Freshly ground black pepper
Salt to taste
Method:
Heat a frying pan and dry fry the spring onion for about a minutes. Drizzle olive oil, season with salt and set aside. Whisk together all ingredients mentioned under "For Dressing" and set aside. Then toss the cucumber, lettuce, radishes, spring onion, mint and dressing together. Scatter cottage cheese curds all over the salad and serve.
