Guacamole Auténtico


Ripe avocados – 2
Red onion, minced – ½ cup
Serrano chillies – 2 stems and seeds removed, minced
Cilantro leaves, finely chopped – 2 Tbs
Fresh lime or lemon juice – 1 Tbs
Ripe tomato, seeds and pulp removed, chopped – ½
Salt and freshly ground pepper


Cut avocados in half. Remove seed. Scoop out avocado from the peel, put in a mixing bowl.  Using a fork, mash the avocado. Add the chopped onion, chillies, cilantro, lime or lemon, salt and pepper and mash some more.  Keep the tomatoes separate and mix it only before its time to serve. Its best to make it with a pestal and mortar.


·         For a very quick guacamole just take a 1/4 cup of salsa and mix it in with your mashed avocados
·         You can even blend all ingredients in the blender if you don’t like it chunky.
·         You don't need to have tomatoes in your guacamole. Its optional.
·         To extend a limited supply of avocados, add either sour cream or cottage cheese to it.
