Tuscan Vegetable Medley


Ingredients:


Vegetables:
Broccoli (Small Florets)
Carrots (Julienned)
Yellow Squash (Julienned)
Sweet Peppers (Julienned)
Roma Tomato (Diced)
Zucchini (Diced)
Garlic (Minced)

Seasoning:
Basil
Oregano
Parsley
Olive Oil
Salt to taste
Lemon juice
Butter (use margarine for low-cal version, people in USA can use I cannot believe that its not butter)

Method:

Steam the vegetables till your preference. In a skittle add olive oil, and minced garlic cloves. Saute till garlic is starting to brown. Turn off heat. Add lemon juice, oregano, basil and parsley. Place mixed vegetables in a large bowl, pour Italian garlic- herb sauce over the vegetables and serve warm. Add salt if required.
