Upma Kozukattais - 3 varieties



Upma  kozukattai -  I (Low- Cal)


Quinoa – 1 cups
Toor dal/moong dal – ½ cup
Peppercorns – 1tbs
Dried red chillies – 2-4 (Depending on how spicy you want it)
Cumin seeds – 1-2 tsp
Freshly Grated Coconut – ½ cup
Urad dal - 1 tsp
Channa dal – 1 tsp
Curry leaf – 1 sprig
Mustard seeds – 1 tsp
Asafoetida – a pinch
Green chillies – 3 (finely chopped)
Ginger – 1” (finely chopped)
Water -
keep adding till the mixture is submerged and you get upma
Oil
Salt to taste

Method:

Grind the quinoa along with moong or toor dal, peppercorns, dry red chillies and cumin. Dry roast this coarse mixture in a skillet along with grated coconuts and set aside. In a wok, add oil and when it becomes hot add mustard. Once the mustard splutters add the chana dal, urud dal, asafoetida, curry leaves, ginger and green chillies. Sauté. Then add the coarsely ground powder and sauté. Add the water slowly stirring so as to not form lumps. Take off the flame once all water evaporates and keep under the fan for cooling. Once it cools shape them into oval shaped balls in your hands and place them on idli moulds greased with ghee/oil. Then steam for 10 -12 minutes. Serve hot with chutneys and sambars.

Cumin seeds – 1-2 tsp
